Every summer there are some Garden crops Which is produced in abundance. Cucumber is one of those. Even if you don’t grow them yourself, they are widely available in stores and farmers markets. These simple cucumber sandwiches are a creamy and fresh way to enjoy cucumbers!
Cucumber tea sandwiches are often served at tea parties as finger food, and are a classic. They’re also a practical and delicious choice for snack time, an appetizer, or a simple side dish.
Cucumber cream cheese sandwiches
Cucumbers contain a high water content and some fiber and various nutrients. You’ll find vitamin C and K, magnesium and potassium. They are great Way to moisturize During the warm summer months. Not only that, it adds a nice refreshing flavor to dishes.

Authentic English cucumber sandwiches supposedly originated in the 1870s when Britain occupied India. The British created it to combat the heat. Later it became a staple of afternoon tea time. Then the Americans added the creamy sauce with bread and cucumber.
I added some microgreens for extra flavor and nutrition. Plus, it adds another touch of color and freshness.
Various forms (including grain-free products)
For many years I didn’t eat gluten or grains, but now I will Eat it on occasions. Classic cucumber sandwiches use crustless white bread. This isn’t my first choice for a number of reasons, but it tastes just as good with grain bread or sourdough.
If you want to skip the grains, there are a few different options. We also like to use butter lettuce leaves as a sandwich wrap. Another option is to keep it simple and top the cucumbers with a creamy cheese sauce.
I chose cream cheese for the filling, but some recipes use mayonnaise for the filling. If you want a dairy-free option, try mixing a little mayonnaise with herbs and spices instead.

Cucumber sandwich bites
Creamy and crunchy cucumber sandwiches are packed with classic flavor. Features delicious seasonal ingredients and herbs.
Spreadable herbed cream cheese
- 8 ounce Cream cheese (soften)
- ¼ cup Crumbled feta cheese (or up to 1/2 cup)
- ¼ cup Green onions (thin slices)
- 2 tablespoon Fresh parsley (minced)
- 1 tablespoon Fresh dill (minced)
- 1 teaspoon Lemon juice
- ¼ teaspoon Garlic powder
- ¼ teaspoon Onion powder
- ¼ teaspoon salt
To apply
- 1 cup Microgreens
- Black pepper (freshly cracked)
- Butter lettuce leaves (optional, for wrapping)
- Sourdough or grain bread (optional)

Cut the cucumber into thin slices or rounds (about 1/4 inch thick).

Place the cucumber in a bowl. Sprinkle with salt and pour enough vinegar to cover. Leave it for 10-15 minutes.

Drain the cucumbers and place them on a clean towel. Dry well.

In a medium bowl, mix the cream cheese, feta, scallions, parsley, dill, lemon juice, garlic powder, onion powder, and salt. Mix until smooth and completely blended.

For cucumber bites (no bread): Top the cucumber slices with a small amount of the cream cheese mixture. Add microgreens and a pinch of black pepper.

To prepare lettuce wraps: spread the cream cheese on the lettuce leaves, then add the cucumber and small vegetables, then fold them.

For sandwiches: Spread cream cheese over slices of sourdough or your favorite bread. Place a layer of cucumbers and small vegetables, then cut them into slices.
