  • 4 clove garlic (minced)
  • 1 tablespoon Fresh rosemary (chopped, or 1 teaspoon dried rosemary)
  • 1 tablespoon Fresh thyme (or 1 teaspoon dried thyme)
  • 2 tablespoon Fresh parsley (chopped, or 2 teaspoons dried parsley)
  • 1 teaspoon salt
  • ½ teaspoon Black pepper
  • 1 teaspoon Dijon mustard (optional)
  • In a bowl or jar, whisk together olive oil, lemon juice, lemon zest, garlic, herbs, salt, pepper, and Dijon mustard, if using.

  • Place the chicken in a glass jar or reusable storage bag and pour the marinade over it. If the mixing bowl is large enough, you can place the chicken in it.

  • Cover and place in the refrigerator for at least 2 hours or up to 24 hours.

  • Remove the chicken from the marinade and discard any remaining lemon chicken marinade.

  • Grill, bake, or roast the chicken until the chicken reaches an internal temperature of 165°F.
