The blend originated in the south of France, or the Provence region, and is composed of herbs that grow naturally in that region. The original blend of Herbs of Provence notes contains delicious summer notes of thyme, marjoram and rosemary. Later, lavender, fennel, and even orange zest were added to certain versions. Many Herbs de Provence seasoning blends available in grocery stores include lavender and other herbs.
Not only do they taste good, but these herbs have powerful antimicrobial properties to help the immune system do its job. Among many other things, rosemary helps improve memory, thyme is good for the lungs, and marjoram helps relieve nervous tension. Lavender is also beneficial relieve stress, Orange peel is refreshing, and fennel aids digestion. Together, they make a powerful and delicious blend of spices.

It’s super simple, but requires an extra step compared to many of my spice blend recipes. I usually just add all the herbs to a jar, shake, and I’m done. Since these are often whole herbs, like fennel seeds or lavender buds, I do a quick run through the food processor first. Not only are they easier to use in recipes, freshly ground herbs are more fragrant and flavorful. Blending or chopping herbs releases more of their volatile oils, making them taste fresher.
So what are herbs of Provence for anyway, besides looking fancy? The answer is a lot!
Herbes de Provence is versatile. It can be described as bold, woody and a little floral. It goes well with almost any cut of meat (especially pork and chicken recipes) and really complements most of them Fish and seafood. I often add it to homemade soups and broths as well.
We like to pre-mix a little with grass-fed butter and keep it ready for a vegetable topping, sourdough bread, or cauliflower rice. It also makes a great addition to breakfast dishes like my favorites Egg bites video or Homemade breakfast sausage.
Try adding compound butter with Herbes de Provence to roasted chicken before putting it in the oven. Because the herbs are chunky and not completely powdered, they work best when added to the beginning of recipes. This gives them a chance to infuse their flavors into the dish. It’s equally delicious over roasted vegetables or potatoes.

Homemade Herbs de Provence combines herbs like thyme and marjoram with lavender, fennel, and orange peel for a delicious and flavorful spice blend.
Use a mortar and pestle or food processor to slightly grind any whole herbs, such as rosemary, lavender flowers, or fennel. The herbs should be coarse and not finely ground.
If you are peeling oranges yourself, remove the peel from one organic orange and dry in the oven on the lowest setting or in the dehydrator until completely dry.
Combine all ingredients in a bowl or bowl and mix.
Store in an airtight container away from heat and light.
